Pancake day, made simple.

You’ve decided you want pancakes, and you’ve decided you want them now. So lets get straight into this with the simplest pancake batter mix you will ever see. All you need is 1 cup of plain flour, 1 cup of milk and 2 eggs. Throw it all into a bowl, whisk, and bingo you’re now ready. I’ve decided to include 2 of my favourite pancake flavours into this post. The first is a banana honey combination, known as the banoney or honana. The second wicked combination is raisin, yoghurt, blueberry and jam, know as the… ragoberram?

To make the first I pour the batter into a hot pan and leave for around 10 seconds. Then place 3 thinly sliced pieces of banana onto the top of the batter. I leave for around a minute  or until the side facing the pan is looking well done. I then flip it over and cook the side with the banana on, and thats it you can now remove it from the pan and put to one side. Repeat this as many times as you want to create your desired amount. Once happy with the stack you have achieved, drizzle honey over and tuck in.

The second is very similar to prepare to the first. Apart from this time you add raisins to the batter while it is cooking rather than banana. Once you have achieved your desired stack height, add a dollop of yoghurt to the top, a handful of blueberries and a drizzle of jam. Then just like the first, tuck in and enjoy.
